Fortunately for me, I do not have any food allergies or sensitivities that I’m aware of. But I know many people who do: nuts, lactose and gluten in particular are sources of dietary woes. Gluten has been getting more attention recently, most notably in connection to celiac disease, an inherited autoimmune disorder.
