Healthy options for Pesach, no Matzah required

Passover requires a lot of us. We clean
like crazy; we replace our usual dishes,
utensils, pots and pans with ones we use for
only a week. We empty our cabinets and
then restock them with Passover items. Besides
all that, we think about the food we
eat with more care and scrutiny than ever.
